Homemade ice cream sandwiches are fun and easy to make with this recipe.
 
Preheat the oven to 350 degrees and put the rack in the center. Line a baking sheet with parchment paper or a Sil-Pat.
 
Melt ½ cup unsalted butter. Mix in ½ cup sugar, then one egg and 1 teaspoon vanilla extract. Next add ½ cup all purpose flour, ¼ cup unsweetened cocoa powder, and ¼ teaspoon salt. Spread the batter evenly in the pan and bake for 10 minutes. Turn the pan around halfway through so it cooks evenly. The cake should be dry to the touch, and the edges should begin to pull away from the sides of the pan. Place the pan on a wire rack to cool.
 
Gently place the cake on a cutting board. Use a serrated knife to cut it in half. Place one half, top side down, on a piece of plastic wrap. Spread slightly softened ice cream of your choice on the cake, then top with the other piece of cake, top side up. Wrap the cake and ice cream tightly with plastic wrap and place it in the freezer for at least two hours.
 
Remove the cake and ice cream from the freezer, unwrap them, and use a serrated knife to cut them into square or rectangular sandwiches. You can also use a cookie cutter to make fun shapes. You can wrap leftovers in plastic wrap and freeze them for up to a week.
